After 5 comical years living in the US and watching Starbucks baristas repeatedly massacre the beverage the world knows as tea, Kim in a 6 month collaboration with the barista in NE Portland have finally found a solution. The problem to date has been the exact science and patience required to build the perfect cup of tea. It's not good enough to just throw hot water and a bag into a cup (a porcelain cup if you please...that paper rubbish is the death) and hope.
The variables that need consideration include size of cup, amount and critically the temperature of hot water (tepid won't cut it people) and the "time to steep" algorithm. Yes, it's complicated.
Alas there is a solution. Do away with the water all together and just put foamed milk in a cup with the tea bag. Somehow that means no steeping required and a happy wife.
We may well be in the US a lot longer now we have this sorted out.
